We are proud to be able to purchase a wonderful selection of fruit, salad and vegetables directly from Haus Bollheim. Haus Bollheim in Zülpich-Oberelvenich has been farmed biodynamically since 1982. During this time, the farm has grown into a unique organism. Thus, we are not only part of the agricultural turnaround, but also make our contribution to the preservation of species and variety diversity through old varieties that defy climate change. Ideally, all this goes hand in hand with a soil-friendly circular economy and - last but not least - the diversity of sustainably working farmers and their strengthened financial basis. In addition, we are delighted to be able to bake our own bread with the finest wheat, rye and spelt from the Haus Bollheim mill bakery in Zülpich. This is really something special: the Mühlenbäckerei makes a big exception for us and supplies us with parts of their meal - and we, in turn, dare to take the step of preparing doughs in-house and baking our own creations for the first time.
We’ve supported the philosophy of Slow Food Deutschland since 2019. What prompted that decision? Slow Food is a non-profit organisation that works worldwide for a food culture based on appreciation, responsibility and enjoyment. The four focus areas are biocultural diversity, animal welfare, the climate and environmental protection – issues that occupy us every day, and that we refer back to intensively in all our decisions.
We’ve been focusing for years on developing vegetarian and vegan dishes that convince even meat-lovers. We consciously develop interesting alternatives without meat and fish, and we bank on our guests seeing them as a bonus, not a loss. The amount of meat and fish in our dishes is around 20%.
We’ve been certified organic since August 2021. What that means is: on request, you can order our complete range of dishes for your event in organic quality. Our standard range includes ChariTea organic teas, organic milk and all non-dairy milks in organic quality. We also offer selected organic alcoholic and non-alcoholic drinks. CERTIFICATEWe’ve always wanted to develop our own DEINspeisesalon espresso blend. And now we have! Our DEINspeisesalon coffee is certified organic and is roasted especially for us by Benson Coffee in Neuehrenfeld. Benson Coffee stands for lovingly selected speciality coffees – roasted by Benjamin Pozsgai, two-times German roasting champion (2016 and 2019). Benjamin purchases raw coffee independent of the exchange price directly from coffee farmers, to offer them an essential perspective and to show appreciation of their work. And by the way: Benjamin delivers the freshly ground beans in reusable 4-kg buckets, by cargo bike. Inspection authority: DE-ÖKO-006
On consultation, we plan amounts for your event so that not all dishes have to last until the end. We also portion the dishes directly for all guests in smaller units. That looks much better – and avoids leftovers. That means we can produce exactly what’s needed, and value quality over quantity. Who benefits from all this? You and the environment!
We will be installing our own composting system in the medium term, breaking down food waste within 24 hours to soil substitute – which in turn will go back to our farmers and suppliers.
We use clean power from RheinEnergie Köln, generated from regenerative sources. That means we’re playing an important part in the energy revolution. We also ensure our production site uses water-saving appliances and processes.
We proudly present: our own soulbottles edition “Give bees a chance” in cooperation with the Cologne artist Maga Fraikin. The Berlin-based soulbottles company produces glass bottles that not only look great, but are also the perfect receptacles for still and sparkling water from our GROHE filtration system, which we serve in-house. Why filtered water? The production and transport of bottled water causes both climate-damaging emissions and waste. One litre of tap water causes 600 times less CO2 emissions than a litre of bottled water. On top of that, soulbottles support the amazing Viva con Agua drinking-water project with every bottle sold. And incidentally, we serve Viva con Agua “still” and “loud” at our off-site events.
For the décor at your events, we try our best to avoid disposable and plastic items, and use arrangements made of plants native to Germany and seasonal flowers. Our tip: new purchases often aren’t necessary, since we have great recommendations from our pool of service providers who can rent you the perfect decorations for your event. The imagination knows no limits... especially if you mix & match.
